Our new Head Chef

We welcome to the team our new Head Chef Dallas Costello, an industry veteran with over 20 years experience. He has previously headed the kitchens of local institutions such as Lychee Lounge, Laruche, The Chelsea Bistro and Hatch & Co just to name a few. Dallas is a classically trained chef with a passion for fresh, seasonal produce with simple, honest flavours. He loves layering flavours and extracting the most out of each ingredient, often utilising them in multiple preparations in a single dish. Dallas has recreated the menus (a la carte, brunch and lunch specials) to be uncomplicated yet refined, focusing on European flavours with his signature flair. VIEW MENU
